This is a super-charged soup with a couple of kissing cousins – a bean and a grain. It’s wholesome in every way, with flavours leaning towards southern Italy. This thick, rich soup is seasoned with barley miso, which is my way of adding a stock base flavour without having to make a stock, resulting in a cleaner, lighter tasting soup.

Ingredients

Quantity Ingredient
1/2 cup dried cannellini beans, soaked overnight in enough water to cover with a 3 cm piece of kombu
1/2 cup pearled barley, soaked overnight in enough water to cover
6 cups Vegetable stock
or 6 cups water
1 tablespoon olive oil
1/2 leek, finely sliced, white part only
1/2 carrot, diced
2 tomatoes, diced
sea salt
1 tablespoon barley miso
8 pitted black olives, sliced
10 basil leaves, sliced

Method

  1. Drain the beans, kombu and barley, and add to a saucepan with the stock or water. Bring to the boil over high heat, then reduce the heat and simmer for 15–20 minutes.
  2. Meanwhile, heat the oil in a separate saucepan over medium heat and sauté the leek for 3 minutes, or until softened. Add the carrot and diced tomatoes to the pan with 3 tablespoons water and a sprinkling of sea salt, cover and simmer over low heat for 15 minutes. Add this mixture to the bean and barley mixture and continue to simmer for a further 15–20 minutes, or until the beans are soft.
  3. Put the miso in a bowl, pour in some broth and mix until the miso dissolves. Add the diluted miso to the pan and simmer for 3 minutes. Just before serving, stir in the sliced olives and top with the basil.

Note

  • If you’re using a strong stock, halve the quantity of miso. Otherwise, simply flavour according to your taste, adding more miso as required.
