Steamed rockling with basil vinaigrette

Although steaming seems a delicate method of cookery, you still need to be careful as where the fish sits can get mighty hot. Check your fish while it’s hidden in the bamboo basket, as it can quickly overcook. This method of cooking fish is light, healthy and clean.

Ingredients

Quantity Ingredient
4 boneless, skinless rockling, ling or cod fillets
sea salt

Basil vinaigrette

Quantity Ingredient
3 tablespoons extra virgin olive oil
3 tablespoons red wine vinegar
1/2 red onion, diced
1 tomato, diced
8 pitted black olives, sliced
3 tablespoons lemon juice
2 tablespoons basil leaves, finely sliced

Method

  1. Line a bamboo steamer with baking paper or lightly oil a stainless steel steamer then place a single layer of fish inside. Sprinkle over a little sea salt. Place the steamer over a saucepan of boiling water, cover the steamer, and allow the fish to steam for about 7 minutes, or until firm to the touch – it should break away easily between your fingers.
  2. Meanwhile, to prepare the basil vinaigrette, put the oil, vinegar, onion, tomato and sliced olives in a saucepan over low heat and cook for 5 minutes, or until the onion and tomato soften slightly. Stir through the lemon juice and basil.
  3. To serve, carefully lift the fish fillets onto serving plates and spoon over some of the warm vinaigrette.
