Warm red onion, tomato and basil vinaigrette

I serve this dressing with steamed fish, and it also works well over millet or quinoa grains – pour it over while the grains are still warm and allow them to absorb the flavours. Refrigerate for up to three days.

Ingredients

Quantity Ingredient
3 tablespoons extra virgin olive oil
3 tablespoons balsamic or red wine vinegar
1/4 red onion, diced
1/2 tomato, seeds removed and diced
6 pitted black olives, sliced
2 tablespoons lemon juice
2 tablespoons basil leaves, roughly chopped

Method

  1. Simmer the olive oil, vinegar, onion, tomato and olives in a saucepan over low heat for 3 minutes, or until the onion and tomato soften slightly. Just before serving add the lemon juice and basil and serve warm.
