This is a lighter version of mayonnaise, with an excellent mouthfeel and fine, lemony flavour. It works well over blanched vegetables or served with grilled fish or chicken. Refrigerate before serving for up to three days.

Ingredients

Quantity Ingredient
300g silken tofu
1 tablespoon extra virgin olive oil
1 tablespoon lemon juice
1 teaspoon dijon mustard
2 teaspoons lemon zest, finely grated
1/4 teaspoon ground turmeric
1/4 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
2 teaspoons white miso
2 teaspoons brown rice syrup

Method

  1. Put all of the ingredients into a food processor and process until smooth and creamy. Cover and refrigerate until ready to use.
