This black, mildly salty condiment is a storehouse of iron and iodine. Use for its dramatic look and flavour on top of greens, grains and salads.

Ingredients

Quantity Ingredient
60g wakame seaweed
1/4 cup sesame seeds, rinsed and drained

Method

  1. Preheat the oven to 170°C. Bake the wakame on a baking tray for 5 minutes, or until dark and crunchy. Allow to cool, then place in a mortar or a spice grinder and pound with a pestle or grind to a fine powder.
  2. Dry-fry the sesame seeds in a shallow frying pan over medium heat for 5 minutes, or until the seeds begin to brown and pop. Remove from the heat.
  3. Place the sesame seeds in a mortar or a spice grinder and pound with a pestle or grind until roughly crushed. Combine with the wakame powder and store in an airtight container. Keep in a dry, cool place for up to 3 weeks.
