This spicy mixture will add a touch of the Orient to a grain, bean or greens dish. It also tastes superb sprinkled over cooked fish or chicken.

Ingredients

Quantity Ingredient
80g hazelnuts
40g cumin seeds
40g coriander seeds
40g sesame seeds
1 teaspoon coarse sea salt

Method

  1. Preheat the oven to 160°C. Roast the hazelnuts on a baking tray for 7 minutes, or until golden. Remove from the oven and allow to cool. Rub the skins off, place in a mortar or a spice grinder and roughly pound with a pestle or grind.
  2. Roast the seeds separately in the oven for 5 minutes each, or until golden and fragrant. Allow to cool, then add to the hazelnuts with the sea salt. Grind the mixture until you get a coarse crumb-like texture. Allow to cool, then store in an airtight container for up to 3 weeks.
