This great and simple pickle goes especially well with fish dishes. The texture is crunchy and satisfying. Refrigerate for up to three days.

Ingredients

Quantity Ingredient
1 carrot, cut into fine matchsticks
1/2 daikon, cut into fine matchsticks
1 teaspoon sea salt
1 teaspoo brown rice vinegar
1 teaspoon mirin
1 teaspoon toasted sesame seeds

Method

  1. Combine the carrot, daikon and sea salt in a bowl. Transfer to a pickle press or onto a flat surface and cover with a plate topped by a weight and press for 30–60 minutes. Drain off any excess liquid and stir in the vinegar and mirin. Serve with the toasted sesame seeds on top.
