Wok-fried greens in lime and coconut

This is a delicious and quick Asian greens side dish with a little bite that goes well with seared tuna or tofu steaks.

Ingredients

Quantity Ingredient
1 teaspoon shoyu
2 tablespoons lime juice
3 tablespoons coconut cream
1 teaspoon dark roasted sesame oil
1 garlic clove, finely sliced
1 slice ginger, cut into fine matchsticks
1 teaspoon chilli, seeds removed and cut into fine strips
30g raw cashews
3 spring onions, finely sliced
3 bunches asian greens, chopped

Method

  1. To make the sauce, whisk the shoyu, lime juice and coconut cream in a bowl to combine. Set aside.
  2. Heat the sesame oil in a wok or heavy-based frying pan over high heat and sauté the garlic for 1 minute. Add the ginger and chilli and fry for a further minute before adding the cashews. Stir-fry for 2 minutes, or until the nuts brown.
  3. Add the spring onion and Asian greens and stir-fry for 2–3 minutes, or until the leaves start to wilt. Increase the heat and stir in the sauce for 1 minute to coat the vegetables. Serve hot.
