Warm asparagus with garlic tofu sauce

This is a feel-good sauce that reminds me of mayonnaise without the high fat content. Try adding a teaspoon of finely chopped preserved lemon or some roasted red capsicum for added excitement.

Ingredients

Quantity Ingredient
4 garlic cloves, unpeeled
150g silken tofu
1 tablespoon extra virgin olive oil
3 tablespoons champagne vinegar
1 tablespoon white miso
1 tablespoon dijon mustard
1/4 teaspoon ground turmeric
1 lemon, finely zested
sea salt and freshly ground black pepper
500g asparagus, trimmed

Method

  1. Preheat the oven to 175°C. Roast the garlic on a tray for 10 minutes, or until soft. Allow to cool, then peel the skin.
  2. Place the garlic in a food processor with all remaining ingredients except asparagus and season with sea salt and freshly ground black pepper. Process to make a smooth purée. Transfer the sauce to a saucepan over low heat and keep warm until needed.
  3. Bring a saucepan of water to the boil and blanch the asparagus for 3 minutes, or until tender but still firm. Refresh immediately under cold running water, then drain again.
  4. Arrange the asparagus on a serving plate and spoon over the creamy sauce to serve.
