To create a more flavoursome grain, dry roast the millet in a pan until it browns slightly or begins to pop, then add the water and continue to cook. Millet is a great substitute for couscous.

Ingredients

Quantity Ingredient
1 cup hulled millet
sea salt

Method

  1. Rinse the millet in a fine sieve then bring the millet, 2 cups water and a pinch of sea salt to the boil in a small saucepan over high heat. Reduce the heat to low, cover and simmer for 20 minutes, or until all the water has been absorbed. Leave to rest, covered, for 5 minutes before spooning out.
