The size of your saucepan, the age of the rice and grain size will dictate how your rice will cook. Practice makes perfect rice. Buy a heavy-based saucepan and invest in a flame diffuser (if you have a gas stove) to prevent burnt rice.

Ingredients

1 cup short-, medium- or long-grain brown rice
sea salt

Method

  1. Rinse the rice in water 2–3 times, or until the water runs clear. Put the rice in a heavy-based saucepan with a pinch of sea salt and 2 cups water for short-grain rice or 1½ cups water for medium- and long-grain rice. Bring to the boil, then reduce the heat, cover and simmer for 50 minutes, or until all the water has been absorbed. Remove from the heat and leave, covered, for 5 minutes before eating.
