This raspberry jelly makes a refreshing summer treat. Mix and match fresh fruits and fruit juices to suit your fancy. Enjoy it at the end of a feast to soothe the day away, or try feeding it to overheated children and watch them chill out and relax.

Ingredients

Quantity Ingredient
3 cups clear apple juice or pink moscato
3 teaspoons agar agar flakes
sea salt
1 tablespoon lemon juice
1 lemon, finely zested
1/4 teaspoon natural vanilla extract
2 cups raspberries, rinsed
1 tablespoon mint leaves, finely sliced, (optional)

Method

  1. Bring the fruit juice, agar agar and a pinch of sea salt to the boil in a saucepan over medium heat. Simmer for 5 minutes, stirring until the agar agar completely dissolves. Add the lemon juice, zest and vanilla, stir to combine, then remove from the heat.
  2. Arrange the raspberries in the base of four serving glasses and gently pour the juice mixture over the fruit. Allow to stand at room temperature or refrigerate for 30 minutes to set. Serve with mint leaves, if desired.
