Lime and fig chicken

This delicious chicken dish has wonderfully contrasting sweet and sour flavours from the lime juice and fig jam. Substitute with plums or apricots if figs are not in season.

Ingredients

Quantity Ingredient
4 skinless, boneless chicken breast fillets
2 tablespoons extra virgin olive oil
sea salt and freshly ground black pepper
1/3 cup lime juice
1/3 cup fig jam
4 ripe figs, quartered
1 tablespoon mint leaves, roughly chopped
1 tablespoon coriander leaves, roughly chopped

Method

  1. Use a sharp knife to butterfly each chicken breast – slice open the thick part of the breast to make a larger, flatter, thinner breast. You may gently pound with a meat mallet to make it even all over if you wish.
  2. Heat 1 tablespoon oil in a frying pan over medium heat. Working in two batches, add the chicken breasts and cook on each side for 3 minutes, or until lightly golden. Season, then remove to a plate and keep warm. Repeat with the remaining oil and chicken. Cut each breast into four long batons.
  3. Add the lime juice, fig jam and fresh figs to the pan over medium heat, stirring well. Simmer for 3 minutes, then gently return all the chicken to the pan. Coat with the sauce and serve warm topped with the mint and coriander.
