A delightfully easy dish to make, dahl is traditionally served with basmati rice. It’s an age-old combination that provides a complete protein meal. I use split mung beans in this recipe, but split green peas will work just as well – just be sure to cook them in more water for a longer period to soften them.

Ingredients

1 1/2 cups dried mung beans, soaked overnight in enough water to cover with a 3 cm piece of kombu
1 tablespoon coconut oil
1 teaspoon black mustard seeds
1 teaspoon cumin seeds
1 garlic clove, crushed
2 cm knob ginger, finely chopped
1/4 teaspoon green chilli, finely chopped
1 onion, diced
sea salt
1 teaspoon ground turmeric
1 teaspoon ground cumin
1 teaspoon ground coriander
100g baby spinach leaves, washed and roughly chopped
1 tablespoon lemon juice
2 tablespoons coriander leaves, roughly chopped

Method

  1. Drain the mung beans and kombu and set aside until needed.
  2. Heat the oil in a heavy-based saucepan over medium heat and add the mustard and cumin seeds. Once the seeds start to pop, add the garlic, ginger, chilli, onion and a pinch of sea salt and sauté for 2–3 minutes, or until softened.
  3. Add the ground turmeric, cumin and coriander to the pan and sauté for 2 minutes, stirring well. Add the mung beans, kombu and 3 cups water. Bring to the boil, then reduce the heat to low and simmer for 25 minutes. Add the spinach, 1/2 teaspoon sea salt, lemon juice and coriander and cook for a further 5 minutes, or until the spinach has wilted. Serve immediately.
