A simple, fresh way to prepare spring onions with minimal effort. This is great with a curry.

Ingredients

Quantity Ingredient
3 spring onions
dash extra virgin olive oil
1/2 chilli
1/2 lime, juiced

Method

  1. Wash the spring onions and trim the roots and the very tops if they’re dry. Slice finely. Dress with the extra virgin oil. Finely chop the chilli and scatter over the top with the lime juice.

Variation

  • To make a bean salad, mix 1 quantity raw spring onions with chilli and lime with 400 g can of drained, rinsed mixed beans, for a more substantial dish. Serves 3–4 as a side salad.

Storage

  • The raw spring onions are best eaten immediately.
