Raw asparagus ribbons with extra virgin oil and chilli

Method

  1. Soft-boil two eggs as you like them, allow to cool, then chop into quarters and arrange on a plate with a few anchovies and 1 quantity raw asparagus ribbons with extra virgin oil and chilli. Sprinkle with sumac, a little more extra virgin oil and chilli, to taste, and salt and pepper.
