Raw asparagus ribbons with extra virgin oil and chilli

Method

  1. Mix raw asparagus ribbons with extra virgin oil and chilli with a ball of ripped mozzarella and 3 torn apricots. Chop a few sprigs of any soft herbs, place in a small bowl, season and add a little extra virgin oil and some capers if you have them. Toss with the salad, arrange on plates and serve.
