Spring onions are so good on a barbecue or griddle: blackened, smoky and sweet.

Ingredients

Quantity Ingredient
1 bunch spring onions
light olive oil

Method

  1. Clean the spring onions, leaving them whole with the roots on, trimming the very tops only if they’re dry. Sprinkle with a little salt and light olive oil and place on a very hot barbecue or griddle pan for about two minutes until charred, then turn and char the other sides equally. I love eating these with grilled meat.

Variation

  • Turkish pizza. This is scrumptious. Preheat the oven to its highest setting. Mix 100 g romesco sauce with 100 g minced lamb and spread it on a pizza base. Top with char-grilled spring onions and bake in the hot oven for 20 minutes. Serves 2 as a light lunch.

Storage

  • Char-grilled spring onions will keep for a few days in a sealed container in the fridge; return to room temperature to serve.
