Ingredients

Quantity Ingredient
1 garlic clove, peeled
1/2 cup mixed fresh herbs, chopped, (such as oregano, basil and parsley)
freshly cracked black pepper
2 tablespoons olive oil
1 lemon, zested
12 lamb cutlets, trimmed of all fat
lemon wedges, to serve
Hearty tabbouleh, to serve

Method

  1. Combine all ingredients except the lamb and tabbouleh in a mortar and pestle (if you have one) or a small blender. Pound or process to form a rough paste.
  2. Marinate the cutlets in this mixture for 30 minutes, or longer if you have time.
  3. Heat a barbecue or grill to high heat and cook cutlets for 2 minutes on each side or until cooked to your liking. Serve with a squeeze of lemon and tabbouleh.
