Chilli and soy stir-fried kangaroo with bok choy

Ingredients

Quantity Ingredient
1 x 450g kangaroo sirloin
1 tablespoon peanut oil
250g bok choy, washed and cut into quarters
80ml sweet chilli sauce
80ml light soy sauce
3 spring onions, finely sliced, green top only
rice, steamed, to serve

Method

  1. Divide sirloin down the centre into two pieces. Trim any white sinew and slice on an angle into 1 cm slices.
  2. Heat the peanut oil in a wok over a high heat. Add the kangaroo and stir-fry for 1 minute. Add the bok choy, chilli sauce, soy sauce and spring onion. Stir well and allow to heat through. Serve with steamed rice.
