This is great for using up all sorts and emptying the fridge of random bits that you’re not sure where or how to use. My mum calls it a ‘whip round the fridge’ night when she cooks this up.

Ingredients

Quantity Ingredient
300g Cooking rice
2 tablespoons olive oil
200g bacon lardons
1 onion, chopped
2 garlic cloves, peeled, finely chopped and crushed
200g frozen peas
200g cooked chicken leftovers
or 200g cooked beef leftovers
or 200g cooked lamb leftovers

Method

  1. Heat the oil in a frying pan and add the bacon, onion and garlic. Fry until the bacon is golden.
  2. Drain the rice and throw it in the pan with the onion and bacon, mixing well. Season with salt and pepper.
  3. Throw in the chicken, beef or lamb.
  4. Add the peas and cook for a further 4–5 minutes, stirring.
  5. Mix everything together and serve – it’s as easy as that.

Optional extras:

  • Add some chopped parsley, for a bit more green. A nice sliced red chilli would be delicious and would also give it a real kick. 1 tablespoon sweet chilli sauce added along with the peas would be gorgeous too.

Serving suggestions:

  • Amazing on its own with a salad. Great as well with some roasted chicken or stir-fried vegetables.

Leftovers:

  • Do not reheat rice.
