Toasted bread salad

Ingredients

Quantity Ingredient
1 Khoubiz (1)
6 cos lettuce leaves
or 4 other lettuce leaves, crisped
1 slender green cucumber
2 tomatoes
60g spring onions, chopped
3 tablespoons flat-leaf parsley, finely chopped
3 tablespoons mint, chopped
155g green capsicum, chopped
60g purslane, choose the leaves near the top of the stalks and the young leafy ends, (optional)

Salad dressing

Quantity Ingredient
1 garlic clove
1 teaspoon salt
125ml lemon juice
125ml olive oil
freshly ground black pepper, to taste

Method

  1. Toast the khoubiz under a hot grill until golden brown. Break into small pieces, or cut into small squares using kitchen scissors. Set aside.
  2. Shred the lettuce or break into small pieces. Peel the cucumber, cut into quarters lengthways, then cut into chunks. Cut the tomatoes into small cubes.
  3. To make the dressing, crush the garlic in a bowl with the salt and mix to a paste. Stir in the remaining dressing ingredients and beat thoroughly with a fork.
  4. Put all the salad vegetables and herbs in a salad bowl, with the bread on top. Pour over the dressing, toss well and serve.
