Ingredients

Quantity Ingredient
8 potatoes
1 onion, finely chopped
1 small handful flat-leaf parsley, finely chopped
1/2 teaspoon dried mint
salt and freshly ground black pepper, to season

Salad dressing

Quantity Ingredient
1 garlic clove
1 teaspoon salt
125ml lemon juice
125ml olive oil
freshly ground black pepper, to taste

Method

  1. Scrub the potatoes, then cook them in their jackets in a saucepan of boiling salted water until tender. Drain and cool slightly, then peel and cut into 2 cm cubes.
  2. Place the potatoes in a bowl with the onion and parsley. Sprinkle with the mint, rubbing it to a powder. Season with salt and pepper.
  3. To make the dressing, crush the garlic in a bowl with the salt and mix to a paste. Stir in the remaining dressing ingredients and beat thoroughly with a fork. Pour over the potatoes. Toss and serve at room temperature.
