Ingredients

Quantity Ingredient
Lubyi bi zayt, see recipe for ingredients and method
500g okra
see method for extra ingredients

Method

  1. Substitute 500 g okra for the beans in the lubyi bi zayt recipe.
  2. Heat the oil in a frying pan and fry the okra quickly, stirring carefully so as not to break them. Remove to a plate with a slotted spoon and set aside.
  3. Make the tomato and onion sauce as directed and simmer for 15 minutes. Add the okra and 3 tablespoons chopped coriander leaves instead of the parsley. Cover and simmer for 20 minutes, or until tender.
  4. Pour 60 ml lemon juice over the okra, then cover and cook for a further 5 minutes. Serve hot or lukewarm.

Note

  • Tinned or frozen okra may be used instead of fresh okra. Do not fry them in the oil.
