This recipe is called afelia, is a Cypriot style of cooking vegetables or pork with coriander seeds and red wine.

500g mushrooms

Method

  1. Follow the recipe for afelia I, substituting 500 g mushrooms for the potatoes. Trim the mushrooms and wipe them clean with a dry cloth — do not wash.
  2. Fry the whole mushrooms in the oil until the juices evaporate. Reduce the heat, add the wine, and salt and pepper to taste. Cover and simmer for 10 minutes. Add the coriander seeds, then cook for a further 2 minutes and serve.
