Rumi is an aged salty yellow cheese, comparable to Parmesan. Combining the Rumi cheese with the peppery rocket (gargeer) leaves and sun-dried tomatoes makes for a simple, yet flavoursome fresh starter or side salad.

Ingredients

Quantity Ingredient
20g pine nuts
100g rocket
20g sun-dried tomatoes
25g rumi or parmesan cheese shavings
1/2 pomegranate, seeded, to garnish

For the pomegranate salad dressing

Quantity Ingredient
2 tablespoons pomegranate molasses
2 tablespoons lemon juice
4 tablespoons olive oil
salt
freshly ground black pepper

Method

  1. To make the dressing, combine the pomegranate molasses, lemon juice and salt and pepper, to taste, in a bowl, then slowly stir in the oil with a whisk.
  2. Toast the pine nuts by placing in a dry frying pan over a medium heat and stirring for 2 to 3 minutes until they turn golden brown.
  3. Toss the rocket in the pomegranate dressing and place on a platter. Arrange the sun-dried tomatoes and cheese shavings over the top and garnish with the pine nuts and pomegranate seeds.
