For this salad we have used smoked herring and seasoned it with quite a strong dressing using garlic, onion and olives. Include lots of mixed salad leaves with this salad so that the combination is not too overpowering.

Ingredients

Quantity Ingredient
4 smoked herring fillets
mixed salad leaves

For the dressing

Quantity Ingredient
100g raisins
100ml olive oil
2 garlic cloves, crushed
2 lemons, juiced
1/2 red pepper, cut in small cubes
1/2 red onion, finely chopped
1/2 teaspoon sugar
50g pitted green olives, sliced
salt
1/2 yellow pepper, cut in small cubes
1/2 green pepper, cut in small cubes

Method

  1. Soak the raisins in lukewarm water for 15 minutes until softened, then drain. Clean any black parts from the herring and cut the fish into strips.
  2. Mix all the dressing ingredients together and season to taste with the salt.
  3. Place the herring on a bed of fresh salad leaves and drizzle over the dressing.
