This is a popular dish of grilled chicken pieces and vegetables on skewers. The skewers make this chicken very easy to serve and it is a guaranteed crowd pleaser.

Ingredients

Quantity Ingredient
100g natural yogurt
1 teaspoon salt
1/2 teaspoon ground turmeric
1/2 teaspoon ground cumin
pinch ground allspice
1/2 teaspoon ground cardamom
1 lemon, juiced
2 teaspoons white vinegar
4 boneless and skinless chicken breasts, cut into cubes
2 onions, cut in half and broken up into layers
4 big tomatoes, cut into wedges
Mint yogurt sauce

8 metal or wooden skewers

Method

  1. If you’re using wooden skewers, soak in water for at least an hour to prevent them burning.
  2. Combine the yogurt, salt, turmeric, cumin, allspice, cardamom, lemon juice and vinegar in a mixing bowl. Add the chicken cubes and leave to marinate in the fridge for about 30 to 45 minutes.
  3. When you are ready to cook the chicken, preheat the barbecue or grill to a medium-high heat.
  4. Skewer the chicken onto the wooden skewers, alternating with the onion and tomatoes, but keeping the onion always next to the chicken. Grill or barbecue for about 8 to 10 minutes, turning halfway through. Serve hot with the mint yogurt sauce.
