These are a bit naughty: chicken skin bites baked to salty crispness. Ask your butcher for the skins, or remove them from chicken breasts, drumsticks and thighs.

Ingredients

250g chicken skin
sea salt flakes

Method

  1. Preheat the oven to 180°C.
  2. Cut the chicken skin into pieces, roughly 4-cm square – the exact size doesn’t matter, so long as they’re equal and not too small. Place in a single layer in a 30 x 20 x 5-cm roasting tray and sprinkle with salt.
  3. Bake for about 30 minutes, shaking the tray every 10 minutes and pouring out the rendered fat each time (save it to use instead of oil or duck fat in another dish).
  4. Tip the scratchings onto kitchen paper, sprinkle with a little more salt if needed, and serve immediately.
