Baked ruby grapefruit with spices and brown sugar

Grilled grapefruit is a breakfast classic, but this recipe rings some changes. Baking instead of grilling softens the whole fruit rather than just the top, coaxing out the juices and mellowing the delicious tartness. Cutting the grapefruit into segments before cooking allows the sugar to seep right through and makes eating it easier, of course.

Ingredients

Quantity Ingredient
1 ruby grapefruit
2 generous pinches ground cinnamon
2 generous pinches ground ginger
2 heaped teaspoons demerara sugar
greek yoghurt, to serve

Method

  1. Preheat the oven to 220°C. Cut the grapefruit in half across the equator. Cut between the flesh and the white pith of each half with a small, serrated knife, working at an angle to reach the bottom of the fruit. Slice along the membranes.
  2. Place the grapefruit halves, cut-side up, in a 30 x 20 x 5-cm roasting tray and sprinkle over the cinnamon, ginger, then the sugar.
  3. Bake for 10 minutes until the sugar has melted. Serve immediately with Greek yoghurt.
