Ingredients

Quantity Ingredient
450g blackberries
1 teaspoon cornflour
75g caster sugar
550g greek-style yoghurt
4 tablespoons maple syrup, to taste
50g pecans, roughly chopped

Method

  1. Place the blackberries in a pan, sprinkle over the cornflour and sugar, and toss to coat. Mash with a fork, then simmer over a medium-high heat, stirring frequently, until completely broken down. Transfer to a food processor and blitz until smooth. Push through a sieve into a bowl to remove the pips and leave to cool a little. Stir in the yoghurt, maple syrup and pecans. Pour into an ice-cream maker and churn according to the machine instructions, then serve. Alternatively, place in a freezerproof container and freeze for 3–4 hours, stirring every hour or so. Blitz in a food processor if there are any ice crystals and serve immediately.
