Ingredients

Quantity Ingredient
1/2 x 400g can chopped tomatoes
sea salt flakes
freshly ground black pepper
1 large tortilla
a handful baby spinach, sliced
4 artichoke hearts in oil, drained and quartered
1/2 preserved lemon, finely sliced, peel
1 mozzarella ball, sliced, about 125g
olive oil, for drizzling
basil leaves, for sprinkling

Method

  1. Tip the tomatoes into a small pan, season with salt and pepper, stir and simmer until thickened. Set aside. Place the tortilla in a hot frying pan until it starts to puff up and turn brown underneath. Transfer to a baking sheet and spread the tomato sauce over the top. Arrange the spinach, artichokes and preserved lemon peel on top, and season with salt and pepper. Top with the mozzarella slices and drizzle with olive oil. Place under a hot grill until the cheese melts and turns golden. Serve sprinkled with basil leaves. Cut into slices to serve.
