Ingredients

Quantity Ingredient
2 pitta bread
1 garlic clove, cut in half
2 tablespoons olive oil, plus extra for brushing and drizzling
3 tablespoons tahini
2 tablespoon lemon juice, plus extra to taste
1 teaspoon sumac, (or smoked sweet paprika)
sea salt flakes
freshly ground black pepper
a large handful baby kale
50g watercress
240g tomatoes, chopped
100g radishes, chopped

Method

  1. Preheat the oven to 180°C. Rub the pitta on both sides with the cut garlic. Brush with olive oil, cut into bite-sized pieces, and place on a baking tray. Bake for 10 minutes until starting to crisp. To make the dressing, crush the remaining garlic into a screw-top jar and add the oil, tahini, lemon, sumac and 4 tablespoons cold water. Season with salt and pepper, shake vigorously and set aside. Place all the remaining ingredients in a salad bowl, add the toasted pitta, and toss with enough of the dressing to coat. Serve immediately.
