Ingredients

Quantity Ingredient
2 teaspoons olive oil
1/4 brown onion, diced small
80g potato, diced small
80g turnips or baby turnips, diced small
sea salt flakes
freshly ground black pepper
20g finely shredded kale
1 x 20cm square sheet puff pastry, 3cm thick
40g cheddar cheese, grated

Method

  1. Heat the oil in the pan and sauté the onion until softened. Add the diced potatoes and turnips and fry until softened (10–15 minutes). Season and add the kale. Mix through, fry for 1–2 minutes, reduce the heat to low, cover and cook for 20 minutes until just tender. Preheat the oven to 220°C. Place the pastry on a baking sheet lined with baking paper. Mix the cheese into the vegetables, then spoon onto the lower half of the pastry leaving a 1cm border. Brush the border with water, fold the pastry over and press the edges together. Cut slits in the top, then bake for 25 minutes until golden.
