Ingredients

Quantity Ingredient
10 tablespoons sunflower seeds
460g strong white flour
10g fine sea salt
10g fast-action dried yeast
40g honey
330ml warm water vegetable oil, mixed, for oiling
1 egg, lightly beaten with a splash of water
2 tablespoons flax, chia and sesame seeds, mixed, for sprinkling

Method

  1. Chop the sunflower seeds in a food processor. Mix the flour, chopped seeds, salt and yeast, then stir in the honeyed water. Turn out onto an oiled surface and knead. Set aside in an oiled bowl, covered, for 15 minutes. Knead and set aside twice more. Leave for 1 hour. Flatten the dough, roll and put it seam-side down in an oiled oval tin. Cover with cling film. Leave for ½ hour. Preheat the oven to 200°C. Brush the dough with egg, sprinkle seeds, then more egg. Bake for 40 minutes. Leave for 10 minutes then cool on a wire rack.
