Ingredients

Quantity Ingredient
60g unsalted butter, diced
125g strong cheddar cheese, grated
60g wholemeal flour, plus extra for dusting
1/2 teaspoon sea salt flakes
freshly ground black pepper
2 teaspoons sesame seeds
2 teaspoons sunflower seeds
2 teaspoons chia seeds

Method

  1. Blitz the butter and cheese in a food processor, add the flour, salt and pepper, then pulse to form a sticky dough. Transfer to a bowl, add the seeds and knead to combine. Tip onto a floured surface and shape into a sausage about 5cm in diameter. Wrap in greaseproof paper and chill for 30 minutes. Preheat the oven to 180°C and line a baking sheet with baking paper. Slice the dough into 3mm discs and place on the sheet, leaving spaces. Bake for 10 minutes, or until pale gold. Leave for a few minutes, then cool on a wire rack.
