Ingredients

Quantity Ingredient
1 sheet ready-rolled puff pastry
100g unsalted butter, diced
200g granulated sugar
3-4 eating apples, peeled, cored and halved
50g pecans
100g fresh or frozen cranberries

Method

  1. Preheat the oven to 180˚C. Cut out a 24cm pastry disc, prick with a fork and chill. Melt the butter in a 20cm ovenproof frying pan, sprinkle over the sugar and cook over a medium heat for 2 minutes until it starts to dissolve. Arrange the apples cut-side up in the pan. Cook for 30 minutes, shaking the pan occasionally, until the caramel is golden. Remove from the heat and fill the gaps between apples with the pecans and cranberries. Cover with the pastry disc and tuck in the edges with a spoon. Bake for 30 minutes, or until golden brown. Set aside for 5 minutes, then invert onto a plate. Serve immediately.
