Ingredients

Quantity Ingredient
60ml lime juice
2 large limes, finely grated zest
1 tablespoon melted coconut oil
1 teaspoon sweet smoked paprika
1 teaspoon hot chilli powder
1 teaspoon ground cinnamon
2 teaspoons fine sea salt
12 drops tabasco chipotle sauce, to taste
300g blanched almonds

Method

  1. Preheat the oven to 120°C and line 1 or 2 baking sheets with baking paper (you might need to cook the nuts in batches). Mix together all the ingredients except the almonds in a bowl. Add the almonds and toss to coat. Spread out in a single layer on the prepared baking sheets and bake for 45 minutes–1 hour, stirring halfway, until golden brown. Keep an eye on them to prevent burning. Leave to cool on the tray before serving.
