Ingredients

Quantity Ingredient
750g chopped honeydew melon
225g Apple sauce, unsweetened
1-2 juice limes
a handful mint leaves

Method

  1. Place the melon and apple sauce in a blender and blitz until smooth. Add lime juice and mint to taste, and blitz again. Pour the mixture into a loaf tin or metal container that will fit into the freezer. Freeze for 2 hours, or until the mixture is frozen around the edges. Scrape and stir the mixture with a fork, then return to the freezer. Repeat stirring and scraping every 30 minutes for 2 hours, or until the mixture is formed of ice crystals. Serve immediately.
