Ingredients

Quantity Ingredient
800g watermelon, cut into chunks
100g fennel bulb, finely sliced
90ml lime, Juiced
2 green jalapeno peppers, finely chopped
2 tablespoons olive oil
1 teaspoon honey
1 handful mint, snipped, plus a few leaves for garnish
salt
pepper

Method

  1. Place the watermelon chunks and fennel in a large salad bowl. Combine the other ingredients to make a dressing, then pour over enough to coat the watermelon and fennel. Serve this salad nice and cool, sprinkled with mint leaves, and seasoned with salt and pepper.
