Ingredients

Quantity Ingredient
400g butternut squash, peeled, deseeded and grated
25g pumpkin seeds
2 quantities Lime & chilli
2 avocados
salt
pepper

Method

  1. Place the squash and pumpkin seeds in a salad bowl, then pour over enough dressing to coat them generously. Season with salt and pepper and set aside for 10 minutes. Peel the avocados, remove the stones and cut the flesh into small chunks. Add the avocado to the squash and add more dressing. Toss gently. Season with salt and pepper to taste. Serve immediately.
