Ingredients

Quantity Ingredient
2 quantities Simple vinaigrette
1 garlic clove, peeled and crushed
2 anchovy fillets in oil, drained and thinly sliced
700g nicely ripe tomatoes
1 large cucumber, halved lengthwise, then cut into rounds
150g Herby croutons
1 generous handful basil leaves
salt
pepper

Method

  1. Mix the vinaigrette, garlic and anchovies. Dice the tomatoes and put them in a sieve over a container. Press with the back of a spoon. Incorporate the juice into the vinaigrette. Arrange the tomatoes, cucumber, croutons and basil in a salad bowl. Pour over enough dressing to coat them, then season with salt and pepper to taste. Set aside for 15–60 minutes before serving to allow the flavours to mingle.
