Ingredients

2 quantities Simple vinaigrette
2 teaspoons honey
100g toasted pistachios, finely chopped
30g flat-leaf parsley, finely snipped
30g mint leaves, finely snipped
50g red onion, finely chopped
1 red apple, unpeeled, diced quite finely
30g dried barberries
salt
pepper
16 endive or chicory leaves

Method

  1. Mix the vinaigrette and honey. In a salad bowl, combine the pistachios, parsley, mint, onion, apple and barberries. Pour over enough dressing to coat the ingredients, then season with salt and pepper. Arrange the endive leaves in a dish and garnish with the pistachio mixture. Serve immediately.
