Ingredients

Quantity Ingredient
2 quantities Simple vinaigrette
2 teaspoons runny honey
400g brussels sprouts, in fine strips, ideally cut with a mandoline
80g pecan nuts, chopped
40g goji berries
1 large pear
or 2 small firm pears
salt
pepper

Method

  1. Mix the vinaigrette and honey and set aside. Combine the Brussels sprouts, pecan nuts and goji berries. Cut the pear(s) horizontally into fine slices, ideally using a mandoline, then cut into matchsticks. Add them to the sprouts. Drizzle with vinaigrette, then season with a generous amount of salt and pepper. Serve immediately.
