Ingredients

Quantity Ingredient
a few saffron threads, finely chopped or ground
800g broccoli
80g raisins
40g pine kernels
2 quantities Simple vinaigrette
4 anchovy fillets in oil, drained and chopped

Method

  1. Mix the saffron with a tablespoon of hot water and set aside. Cut the broccoli into small florets, thinly slice the stalks and arrange them in a salad bowl. Add the raisins and pine kernels. Blend the vinaigrette with the saffron water and anchovies until you have a smooth texture. Pour enough dressing over the salad to coat it and serve immediately.
