Ingredients

Quantity Ingredient
350g mixed quinoa, cooked
120g broccoli in small florets
80g different-coloured carrots, grated or in julienne strips
2 handfuls baby spinach leaves
2 handfuls baby kale leaves
2 quantities Yuzu
chilli powder, as desired
salt
pepper
180g tofu, baked in the oven or fried, cut into dice, (hot or at room temperature)

Method

  1. Arrange the quinoa and all the vegetables in a large salad bowl. Pour over enough dressing to coat the ingredients well. Add chilli powder, salt and pepper to taste. Set aside for 20 minutes to allow the flavours to mingle. Sprinkle the tofu on top and serve immediately. Serve the remaining dressing separately.
