Ingredients

Quantity Ingredient
150g samphire, cut unto sections
200g cucumber, cut unto sections
1 generous handful assorted baby salad leaves
40g gherkins, halved, (dill pickles)
20g capers
1 preserved lemon, pulp removed, skin finely sliced
3 tablespoons extra-virgin olive oil
black pepper
2 fillets smoked mackerel, skin removed, flesh flaked, weighing approximately 70 g each
2 tablespoons lemon juice, or more as desired

Method

  1. Put the samphire, cucumber, salad leaves, gherkins, capers and preserved lemon in a salad bowl. Pour the olive oil and lemon juice on top. Add pepper. Gently incorporate the mackerel into the salad and add lemon juice to taste. Arrange the salad on individual plates and serve immediately.
