Ingredients

Quantity Ingredient
400g assorted kale leaves, central rib removed,finely chopped
4 tablespoons olive oil
1 garlic clove
3 quantities Anchovy
120g Herby croutons
40g grated parmesan

Method

  1. Place the kale leaves in a small salad bowl, add the olive oil and let it seep in to soften the kale. Set aside for 10 minutes. Rub the sides of a salad bowl with a clove of garlic then pour in three-quarters of the dressing. Add the kale and the croutons and toss to coat them. Add more dressing if necessary. Sprinkle with Parmesan and serve immediately.
