Ingredients

Quantity Ingredient
500g assorted courgettes, thinly sliced
2 tablespoons yuzu or lemon juice
90ml extra-virgin olive oil
1 garlic clove, crushed
3 sprigs thyme leaves, chopped
salt
pepper
80g goat’s cheese or curd
2 tablespoons toasted pine kernels
1 small handful basil leaves, torn
1/2 lemon, Finely grated zested chopped

Method

  1. Mix the courgettes, yuzu or lemon juice, olive oil, garlic and thyme, then season with salt and pepper. Set aside for 30 minutes. Drain, set aside the dressing and arrange the courgettes in a dish. Sprinkle with goat’s cheese, pine kernels, basil and lemon zest. Add a dash of the reserved dressing to taste. Serve cool.
