Ingredients

Quantity Ingredient
500g cooked or canned haricot beans, rinsed and drained
300g albacore tuna in oil
1 red onion, finely chopped
3 anchovy fillets in oil, drained
15g flat-leaf parsley
10g basil leaves
5 sage leaves
1 tablespoon capers
1 garlic clove
135ml extra-virgin olive oil
1/2 teaspoon dijon mustard
salt
pepper
1 tablespoon lemon juice, or more as desired

Method

  1. Place the haricot beans, tuna and onion in a large dish. Put the other ingredients into the bowl of a food processor and blend until you have a fairly thick dressing. Incorporate the dressing into the bean mixture then season with salt and pepper and lemon juice to taste. Set aside for 30 minutes before serving to allow the flavours to mingle.
